No joke. I am on my way to becoming an amazing cook!

Friday night I succeeded in making my first homemade lasagna, complete with side dishes! (bagged salad and a bread loaf, but sides none the less!)

And today I used my crockpot for the first time and successfully made an awesome pot roast! I have to admit, I was really nervous about the pot roast because the meat was technically still frozen when I put it into the crockpot, but it turned out great. Next time I'll know to put more seasoning on the meat, but thanfully the Hubs likes any type of meat if you put brown gravy on it.

And semi gross fact about me. You know what my favorite part about a pot roast meal? The onions! I love the big chunky onions and how they are real slimey when you eat them. Sounds gross to describe them as slimey, but oh they are my favorite!!!

Here is the next meal I will be attempting:

Campbell's® Easy Chicken Pot Pie
From: Campbell's Kitchen
Prep: 10 minutes
Bake: 30 minutes

Serves: 4



Ingredients:


1 can (10 3/4 oz.) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
1 pkg. (9 oz.) frozen mixed vegetables, thawed
1 cup cubed cooked chicken or turkey
1/2 cup milk
1 egg
1 cup all-purpose baking mix



Directions:

Heat oven to 400°F.

Stir soup, vegetables and chicken in 9" pie plate.

Stir milk, egg and baking mix in medium bowl. Spoon over chicken mixture. Bake 30 min. or until crust is golden.


I'll let you know how it turns out.

I also found this website today: 5 Dollar Dinners I haven't read enough of the recipes/background information on it yet, but basically this woman puts together $5 dinners for a family of 4, AND the meals are healthy. The healthy part is what intrigues me the most because I do not find it easy to eat healthy on a budget. So if you're looking for ways to stretch your money, check her out!

Ok, I've procrastinated enough from my homework so I better get busy. Until my next meal...

    Just wanted to jump over here and reply about the jacket I was wearing on ww's blog. I actually bought it as a clearance item at a J Crew outlet in Napa, CA. Not sure if you can find it online, but J Crew would be the place to start...
