Sweet N' Sassy Mashed Potatoes

While I'm not quite sure that I can claim this as a "new" recipe, but it's something I made up a few weeks ago and it's been a big hit in our house. I even served it to company and they agreed they were great too!

The name could be misleading... but I was trying to come up with something more fun than just "mashed sweet potatoes." I don't know about you, but that name doesn't really get me excited for dinner. Sweet N' Sassy Mashed Potatoes... now those get me all fired up :)



Grab a couple sweet potatoes and peel them. (I used 2 large potatoes for 4 adults, and had lots left over!)

Cut into 1 inch cubes.

Then boil until soft. (it's been a while since I made these, but I think it was roughly 15 minutes.)

Once soft, drain water and put into bowl, using your tool of choice to mash them. Mine happened to be one of those things for cutting cold butter into flour and Diet Dr. Pepper. The DDP was key to my success.

Depending on how the consistency is, you may want to add a little bit of milk as you mash them to give them more of a creamy consistency. I was in a hurry, so these ended up being a little chunkier than I would normally want them to be.

Once you have them mashed, grab a couple of ramekins (You can see the corner of mine in the picture above) and your brown sugar. Put just enough brown sugar to have a thin covering over the bottom of the ramekin, fill with mashed sweet potatoes, and then put more brown sugar on top. On a normal night, I would probably only do brown sugar on top, but we were having company over so I decided to go all crazy for them. Top with marshmallows. Place under the broiler to roast and melt the marshmallows.

These are pretty easy to make, yet they can bring a big wow factor to the table! And, as long as you don't go too crazy with the brown suger, they're pretty healthy too!
