Great Recipe!

Last weekend we found an amazing deal on meat at Albertsons. They had steaks buy one get two free, and porkchops half off. We got $90 worth of steaks for $30, and about $25 worth of porkchops for about $10.

We were super excited to see that savings on our receipt and in our pocketbook. Now the problem was to find creative ways to cook all of that meat :)

I stumbled across this blog this week and immediately knew we had to try this as a Jamaican reminder.

Crock Pot: Jamaican Jerk Pork Chops
Ingredients:
5 pork loin chops (frozen or fresh..doesn't matter)
1/2 cup frozen corn
1 can black beans, drained
1 cup tri-colored bell pepper strips (I used frozen, but fresh would work well too).
1/2 onion, sliced
Jamaican Jerk Seasoning

Directions:
It doesn't get much easier than this - add all ingredients to your crock-pot, sprinkle liberally with Jamaican Jerk seasoning and cook on low for 6-8 hours. Enjoy!

I actually used about a 1 can of corn, only green bell peppers, and next time I make it I will definitely put the Jerk seasoning on the pork chops. I didn't realize it until I had already layered the other ingredients on it. I think my crock pot is bigger than it needs to be when you're just cooking for two people, so the pork chops were finished in about 5 hours. After that I just turned the crockpot on warm until we were ready to eat.

I served Cody's over instant white rice and mine over plain cous cous. We were literally picking the bones out of the crock pot because all of the meat had fallen off of them. I can't even say enough about how tender and delicious the meat was. You should definitely try this recipe out soon!

I searched Walmart and HEB for the Jerk seasoning. I finally found McCormick's Caribbean Jerk seasoning at United but it was even more expensive than seasoning usually is. You may want to start checking stores more often for this seasoning to find it cheaper!
